Easy breakfast full of protein and good fats. Perfect for anyone for breakfast!
This breakfast was invented by my mom and I back when I was in high school. I had totally forgotten about the recipe until I had a fridge with hardboiled eggs and an almost too ripe avocado. Then this recipe popped into my head and I made it for a quick and simple weekend breakfast. It uses pre-made hardboiled eggs (which are often in our fridge for an easy breakfast or snack) for the source of protein and a half an avocado for an excellent source of healthy and healing fats.
You can definitely substitute in any kind of cheese, your favorite kind would work well. I also make this with goat cheese because I absolutely love the chèvre goat cheese.
Ingredients (Serves 1)
2 hardboiled eggs, halved
1/2 avocado, sliced in chunks
handful of shredded parmesan cheese
salt and pepper to taste
Directions
- Put all ingredients into a bowl, layering or slicing as desired. Sprinkle with salt and pepper to taste
