I love meals that you can stuff full of vitamins, nutrients and good flavor all in one dish. It is easy to prepare and has your protein, fats and vegetables in one dish. This recipe of stuffed peppers has a Mediterranean vibe because of the capers and green olives. These peppers has many depths of flavors in it from the salty and tangy capers and olives and all of the spices in the italian seasoned turkey.
I love the flavor of olives and would eat them multiple times a week. My husband on the other hand, really doesn’t care for olives. I thought of this recipe and knew I had to make it, and they had to have olives. I warned my husband about the olives in the stuffed peppers, and when all of the flavors combined, he really liked the flavor. All of the flavors combine so well, nothing really sticks out like a sore thumb.
These peppers cook for 60 minutes, so plan ahead. It takes that long for the peppers to cook and soften.
Ingredients
4 bell peppers, any color
2 teaspoons coconut oil
1 pound italian seasoned organic ground turkey, make sure there are no added sugars or chemicals or nitrites
1/2 medium red onion, diced
1 medium zucchini, diced finely (aprox 1 cup)
1/4 cup capers
1/2 cup green olives, quartered
2 cups crushed tomatoes, one cup for the sauce and one cup for topping the peppers
salt and pepper
1 cup raw cheddar cheese (or goat cheese)
Directions
- Preheat the oven to 350 degrees
- Prepare the sweet peppers by slicing off the top of the pepper and remove the seeds and fibrous insides. Place the peppers in the 8×8 pan
- In a medium saucepan melt the coconut oil in the pan. Add the ground turkey and onions and brown the meat the turkey is completely cooked
- Add in the zucchini, capers, olives and one cup of the tomato sauce and stir to combine. Season with salt and pepper
- Spoon 1/4 of the meat mixture into each pepper and top with 1/4 cup of tomato sauce
- Bake for 45 minutes and then top each pepper with 1/4 cup cheese, bake for another 15 minutes. Total cook time is 60 minutes
