Like I promised yesterday, it’s another pizza recipe. This time it is a cauliflower pizza crust. It sounds really weird, I know, but it is so amazing. We have made this many times and I finally feel good enough about the recipe to share it with you. Some wouldn’t cook through completely and others lacked a good texture. This recipe cooks through, has a thin crust pizza texture and you can actually pick it up like a real piece of pizza! You will be making this again and again!
In this recipe you rice the cauliflower. You can either grate the cauliflower with a cheese grater or pulse it in a food processor. The cauliflower will look like little pieces of rice and in this recipe will act like a grain or a flour.
This pizza crust takes about 45 minutes to bake before you put on the toppings so make sure to plan enough prep time or you will be eating pretty late.
Once again, this picture was taken on Christmas Eve, so it’s not the best quality, but it will do the trick.
Ingredients
1 head of cauliflower, riced
1/2 cup almond flour
1/2 cup Parmesan cheese, finely grated or pulsed in a food processor (or goat cheese)
2 eggs, beaten
1 clove garlic, finely grated on a microplane or cheese grater
1 teaspoon Italian Seasoning
Pinch of salt and pepper
Directions
- Preheat the oven to 400 degrees and line the pan with parchment paper
- Rice the cauliflower in either a food processor or a cheese grater
- Put a cup of water in a medium saucepan put the cauliflower into it. Put it on medium-high and bring the cauliflower to a boil
- Strain the cauliflower using a very fine strainer until all the water has drained out
- Take a thin kitchen towel on the counter and transfer the cauliflower onto it. Bring up the edges of the towel and squeeze all of the extra moisture out of the cauliflower into the sink. You want to make sure all of the water is out
- Place the cauliflower into a large bowl and it will now be your “rice”
- Add the almond flour, parmesan cheese, eggs, garlic and spices
- Make sure the dough is mixed very well
- Transfer the dough to the cookie sheet and form it into a pizza. It usually makes a pretty big pizza so I make it into a rectangle or use two cookie sheets for circular pizzas
- Bake the crust for 40-45 minutes
- Top with pizza sauce, lots of organic/ raw cheese and your favorite toppings. Bake for another 20-30 minutes until the cheese is cooked through
