Our family tradition for Christmas Eve has always been pizza. My whole family is gluten free and my husband and I are grain free so pizza needed to be well thought out and homemade.
While I was in the kitchen spending time prepping the pizza crusts I was thinking how easy calling pizza delivery is. I mean, one call made and a walk to the door to grab the box and pay the delivery guy.
But then I remembered why I was in the kitchen on Christmas Eve making pizza crust. I was working hard to prepare very healthy, organic veggie, raw cheese, grain free pizza. And that’s a realization I want to pass on to you. All of the time you meal plan and prepare healthy whole foods for yourself or your family you are never wasting a minute. You are feeding your body, you are making it stronger, you are making a difference in the health of your body. And that is amazing and is totally worth it!
This recipe contains flax and almond flour. It’s a VERY sticky crust and it’s hard to roll out, but it does have a very great result.

Oh, and this picture is nothing special… but it was taken during Christmas Eve. One 2013 Resolution or Goal is learn to take better food pictures. They are always a work in process.
Ingredients
3/4 cup flax seed, freshly ground
1/2 cup almond flour
1/2 cup parmesan cheese, finely grated. If you have shredded parmesan cheese you can put it in a food processor
Dash of salt and pepper
1 teaspoon italian seasoning
3 eggs
1 clove of garlic, finely grated
Directions
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper
- In a large bowl combine flax seed, almond flour and parmesan cheese. Add salt and pepper and italian seasoning and mix the dry ingredients until combined
- Add the eggs one at a time and stir with a spatula until combined. Remember I said that it’s sticky, it just may be sticking to your spatula by now and let sit for 3-5 minutes to let the flax set
- Dump (yes, that’s the technical term with this flax crust) the dough mixture onto the parchment paper and do your best to get it into the shape of a pizza. It’s not going to be able to made thicker around the outside for crust so just know it will be all the same thickness. It may look a little lumpy, but once it’s cooked and toppings are on it you won’t know
- Bake for 15-17 minutes until slightly browned and cooked through
- Let cool at least 5 minutes and then apply pizza sauce and the toppings of your choice
- You can make the pizza crust up to 24 hours in advance. I haven’t tried to freeze it, but I’ll have to try soon because it would be great to have this ready to go for a quick dinner one night

Hi Mary. You can use a coffee grinder to grind the flax seeds. Works perfectly!!
