I love a good caper recipe. Do you like capers? They are super salty and give the best flavor mix in a recipe. If you haven’t tried them, this is a good recipe for you to try.
Now add capers + olives + onion + parsley and put them all in a meatball.
It’s a flavor explosion of a meatball made with chicken instead of beef so that the amazing mediterranean flavors come through. Just perfect!
I made these for a party for work and I was so worried about them being dry and getting cold. So I baked them and then reheated them in a crockpot in chicken broth.
Do any of you have chicken broth in your freezer?
I took out 2 cups of it and added it in the crockpot and the meatballs reheated well, stayed warm throughout the party and weren’t too dry. Now I am totally out of frozen chicken broth. I need to add that to my do-do list in the kitchen so I don’t find myself without a good reserve. Here is my chicken broth recipe.
Right now I have beef broth simmering away on my counter. Well, I’m also sipping on a cup of beef broth as I type this. Healing and comforting all in one!
Ingredients
1 pound organic free-range ground chicken
1 free range egg
1/2 cup almond flour
1/4 red onion, finely diced
1 clove garlic, finely chopped
2 Tablespoons capers
1/2 cup feta cheese (I like sheep feta the best)
2 teaspoon ground oregano
1/2 teaspoon ground basil
1/4 cup fresh parsley
ground pepper
healthy sea salt
Directions
- Preheat the oven to 375 degrees and line a cookie sheet with parchment paper
- This is a very easy recipe to make and throw together. You put all ingredients in a medium sized bowl. You can mix it up with your hands (which is the easiest). But if that’s not comfortable for you, use a metal spoon. Ground chicken is VERY sticky, so just a heads up with that. Don’t overwork the meat, just mix it up until everything is combined
- Make little meatballs with your hands about an inch wide and set on the cookie sheet. The meat is really sticky so you aren’t really going to roll it, just form with your hands. You don’t have to space the meatballs too far apart on the cookie sheet. I made smaller meatballs so you could have a few of them.
- Bake for 30-35 minute until the chicken is browned and cooked through
- Makes about 20 meatballs
- Serve immediately or put in a crockpot with chicken broth
I think that this recipe would be great served with a side salad with balsamic dressing. Mediterranean perfection.
