Today I had a lot of things to do and an early morning to start them. In my ideal world I would have a fancy breakfast ready every day full of delicious baked goods (healthy ones of course) and fancy made to order omelets. But in real life, it is often a quick breakfast or one on the run, like today. With those busy times I don’t want to fill myself full of snack bars and processed fast foods just because they are fast. And honestly that’s a lot of people’s go-to breakfasts. Starting the day with trans fats, wheat, artificial colors and preservatives doesn’t sound like an amazing way to start the day for ideal brain power. Let’s start to change that!
A smoothie is my favorite breakfast that is quick and can be eaten at home or on the go. They fill your belly for hours and are very easy to make. One requirement for a good smoothie is a good blender. You can’t be leaving pieces of fruit or ice when you are done blending. That is surely one way to dislike eating smoothies. My blender of choice is the VitaMix. It’s expensive (I know) but it is amazing and will make the absolute best smoothies ever. It also makes all of the best anything you put in there! Kitchen Aid makes a wonderful blender that’s plastic and all one piece. It is also an amazing blender and is about 1/4 the cost of the VitaMix.
This smoothie is a fruit smoothie with the base of frozen strawberries (so you don’t need ice) and has a twist in it because I added a green apple. My favorite fruits are low glycemic fruits (berries, green apples, lemons and limes) and I eat those in any amount. The higher glycemic fruits I limit because they are higher in sugar. I use them as treats and like more of a dessert. I recommend for people dealing with health issues to avoid higher sugar fruits until your body is healthier and can handle that increased blood sugar rush (Even though it’s from the most natural source, it can exasperate health issues).
Ingredients
1/3 can of full-fat organic coconut milk
1/4 cup water
3/4 cup frozen strawberries
1/2- whole green apple, sliced
1 scoop vanilla protein powder
dash of stevia, if needed to make it sweeter
Optional: If you can have dairy, put a splash or two of organic heavy cream into the blender at the end to make the smoothie more rich and creamy.
Directions
- Add ingredients, in order, to a blender
- Blend for 30 seconds until completely mixed. If you have a VitaMix, put it on the smoothie setting and let it run through the setting
- Serve in a large glass, straw is totally optional
- The measurements above aren’t exact… smoothie making is an art so you can add more or less as needed
