The most delicious grain free waffle you have ever tasted!
This recipe is not an original, but I had to post it because they were so fantastic just the way they were. The recipe is from allrecipes.com and was sent to my mom from my aunt, so I have to say thanks to her! These waffles do have some honey in them, so if you are eliminating sugar, replace it with stevia. The waffles will have a slightly different consistency, but will still be excellent. They are perfect topped with a butter, berries, and whipped cream.
Ingredients
1 cup almond flour
1 pinch salt
1 teaspoon baking soda
4 organic free-range eggs
1/4 cup honey
1 teaspoon vanilla extract
coconut oil, for the waffle iron
Directions
1. Preheat waffle iron
2. Combine almond flour, salt, and baking soda in a large bowl. In a separate bowl, whisk together the eggs, honey, and vanilla. Stir the flour mixture into the egg mixture. Grease preheated waffle iron with coconut oil.
3. Serve warm with butter, whipped cream, and berries (recipes below).
Whipped Cream
1 cup Heavy whipping Cream
1/2 teaspoon Stevita stevia
Pour one cup of whipping cream into a bowl and beat with an electric mixer on medium until it holds soft peaks. Once soft peaks start to form, add the stevia. Beat again until mixed and soft peaks hold. It is over-beaten if the consistency starts to turn buttery.
Whipped cream imposters are convenient, but there is nothing like the real thing! It also has no sugar, no hydrogenated fats and is so much healthier.
Berry Topping
1/2 cup strawberries
1/2 cup raspberries
1/2 cup blueberries
1- 1 1/2 teaspoon Stevita stevia (More to taste if you like it sweeter)
In a bowl, combine the berries and allow to thaw until cold. Mash with a potato masher or a dough blender until the berries are broken up and mashed. Mix in stevia and keep cool in the fridge until you are ready to serve.
