The perfect side dish
The name spaghetti squash comes from it’s unique insides. When cooked right, it resembles spaghetti noodles. One of my favorite things about this wonderful vegetable is that it can be used in dishes in place of noodles. It also can be served separately, which is how I prepared it today. A spaghetti squash will last about a month sitting whole at room temperature. It also can be cooked and frozen. I am a big fan of having a well stocked freezer, and that way you don’t end up throwing away any foods. To freeze it, all you have to do is wait until the cooked squash is cooled and then pack it into a freezer bag, label, and freeze it.
Buttered Spaghetti Squash
- Preheat a medium sized pan on medium heat. Add butter and melt. (Use coconut oil if butter-free)
- Add the baked spaghetti squash to the pan and sauté until heated through
- Shred 1/2 cup organic cheese (or goat or sheep cheese if dairy-free) and sprinkle over the top. Once the cheese starts to melt, mix thoroughly.
- Add salt and pepper to taste
Enjoy! I think that this dish faintly reminds me of Mac and Cheese. It’s a good treat for my taste buds!
Here’s the basics on how to prepare a spaghetti squash:
- Preheat the oven to 350 degrees
- Cut the spaghetti squash longitudinally (very carefully, the squash is very hard) and scoop out the seeds on the inside.
- Lay face up on a cookie sheet and cook for 50-60 minutes
- Once the squash is cooled enough to handle, about 10-20 minutes, take a fork and scrape out the flesh. It will come apart like spaghetti noodles.On a side note, I think it is so awesome to see how a vegetable, untouched by the human mind, naturally comes apart just like spaghetti. And can be used in recipes in so many ways!!

I tried spagetti Squash for the first time. I do not like squash but thought I would give it a whirl. Oh My Goodness I Loved it! and with a healthy spaghetti sauce on top. It was fabulas! Thanks Megan. I can give up pasta without a Problem :)
