A sweet and easy curry chicken recipe
I have found with all of my recipe experiments that indian food or curry based recipes are usually very time consuming and complicated. I wanted to have a go-to recipe that is simple enough where I could make quickly and still have all of the taste that a more complex recipe has. Now there is a time and place for complex recipes, and really love them, but if rushing around happens to be your day or week, then this is your recipe. It was just perfect paired with a side of broccoli and a little bit of quinoa.
Ingredients
4 chicken breasts, free-range organic skinless
1 lime, juiced and zested
1 teaspoon cumin
1 teaspoon ground coriander
Dash of Stevia
2 teaspoons curry powder
1 teaspoon organic sea salt
1 1/2 Tablespoon soy sauce
1 serrano pepper, minced
2 Tablespoons coconut oil, melted
3/4 cup coconut milk (either from the can or carton)
Directions
- Start by preparing the chicken breasts. Either pound them down to flatten or butterfly the chicken breasts by cutting them almost all the way in half
- In a bowl mix the lime juice and zest, cumin, coriander, stevia, curry powder, sea salt, serrano pepper and soy sauce until combined.
- In a small sauce pan on low, melt the coconut oil and add the coconut milk and stir until they are incorporated. There is no need for it to be warm or hot. This is just to melt the coconut oil so it won’t be chunky in the marinade.
- Add the coconut milk/ oil mixture to the spice mixture slowly stirring continuously.
- Once combined add the chicken and coat. Let it marinade in the refrigerator for 30 minutes- 2 hours.
- When you are ready to cook the chicken, preheat a large skillet on medium and add the chicken to the pan. If all the chicken doesn’t fit in your skillet, cook it in two batches.
- Once the chicken breasts are almost cooked through, flip the breast over. The one side should be golden brown, and it should take 3-4 minutes.
- Continue to cook the chicken until it is cooked thorough. Plate the chicken and sides and you’re ready to eat.
