A healthy and quick version of a classic recipe.
Most tomato basil soups have a TON of added sugar and a long list of other mystery ingredients. This is a very easy recipe to make. Feel free to add the heavy cream or substitute it for full fat canned coconut milk.
Ingredients
1 Tablespoon Butter
2 cloves garlic, finely minced
2- 14ounce cans of organic strained tomatoes
1-14oz can whole tomatoes, juice saved
2 cups of chicken stock
1/4 teaspoon Stevia
1 teaspoon of salt
freshly ground pepper, to taste
1/4 cup heavy cream or full fat coconut milk
chopped fresh basil, optional for garnish
Directions
- In a large saucepan on medium heat melt butter and add garlic and lightly cook while stirring constantly.
- Add the strained tomatoes and add the whole tomatoes, breaking them apart before adding them to the pan. Add the remaining juice from the tomato juice along with the chicken stock
- Add the stevia, salt and pepper. Let it cook and simmer for 10-20 minutes.
- Add the cream and basil right before serving.
