Delicious tangy bruschetta that works well for a dip for chips, veggies or on top of a salad.
This is an old recipe I’ve had but haven’t made it in a long time. I honestly forgot about it, but when I remembered I bought a bunch of tomatoes and began chopping. I think I could literally eat the whole thing, but that’s ok because it’s healthy. Full of tomatoes, healthy fats, and salty kick.
Ingredients
7 plum tomatoes, diced and juices removed
4 Tablespoon capers
1 Tablespoon caper juice
2 Tablespoon olive oil
Salt and Pepper, to taste
Directions
1. In a large bowl, add tomatoes, capers, caper juice, olive oil and stir. Add salt and pepper to taste.
2. Refrigerate 2-6 hours before serving to let the flavors blend together
