Mixed Berry Trifle

A fancy dessert that you won’t even know is grain and sugar free

This recipe comes from my love of whipped cream, berries and cake (in this case, pound cake). It assembles very easily and you can bring it to a party and nobody will know how healthy it is. That way you can eat dessert allergy-free anywhere you’re at. Did you know that bringing dessert to a party is one of my secrets to eating healthy out of the house and not offending your host or other guests by you saying No to dessert. 

This dessert is fancy, special but still easy to make and assemble. It’s perfect for summertime and all of the outdoor get togethers it brings. I can’t wait to make this, especially because I love the burnt butter pound cake. It’s a spin on a traditional pound cake.

Ingredients

Berries:
1 pint blueberries

1 pint blackberries

1 pint raspberries

1 pint strawberries

Cake:
1 recipe burnt butter pound cake, cut into bite sized squares

Whipped Topping: Sugar Free Whipped Cream

Directions

  • Wash the berries in a colander and let set to drip dry
  • In a large clean bowl add the whipping cream and whip with a hand mixer until soft peaks form. Add stevia and mix together until whipped cream forms stiff peaks
  • In a trifle dish or individual mason jars or cups start by spreading a very thin layer of whipped cream on the bottom. Next add a single layer of the pound cake pieces. Take a variety of berries and layer them on top. Finish the layer by spreading whipped cream over the berries. Continue this layering order until you reach the top of the dish and end with whipped cream
  • Garnish with any extra berries, if desired
