French Silk Pie (Grain Free)

Chocolate chip pie. That’s what I heard that my husband called french silk pie when he was growing up. It was his favorite pie. Well, really anything that contains chocolate is my husbands favorite. When he was growing up he didn’t like the fruit pies or the pumpkin pie that was served at holidays. So because of that his mom would make him french silk pie with chocolate chips sprinkled on top. That’s why it got the name chocolate chip pie.

This pie is DIVINE!! And it has the best grain free pie crust that you’ve had. This whole recipe is from my mother in law. I can’t take the credit for this pie, but I’m beyond excited to bring you this recipe. This will become one of your favorite desserts. I’m also not one who loves the more traditional pies. I prefer banana cream pie or this french silk pie. It’s become one of my favorites! Plus, it’s pretty easy to make. Oh, and I bet nobody will even know that it’s grain free!

Ingredients

1 Recipe of The Best Grain Free Pie Crust

1/2 cup softened butter

1/4 cup honey

1 teaspoon Stevita spoonable stevia (You can also omit the honey and increase stevia to 2 teaspoons to make it sugar-free)

2 eggs

2 oz unsweetened chocolate, melted

1 tsp vanilla

1 cup whipped cream

 

Directions

  • Bake pie shell (recipe here)
  • In medium bowl, cream butter, honey and stevia until fluffy
  • Add eggs, one at a time, beating at medium speed 2 minutes after each addition
  • Blend in chocolate and vanilla
  • Spoon into cool pie shell
  • Chill 2 hours and spread with whipped cream
  • Sprinkle with dark chocolate chips or chocolate curls
