To me and my family a Spritz cookie is one of the most classic Christmas cookies out there. They are a Swedish cookie and we have a lot of Swedish on one side of my family. So a Christmas without a spritz cookie wouldn’t be a real Christmas season. (Maybe I’m being a little dramatic). This recipe is based on my grandmas recipe. All I did to it was switch the sweetener and flour to make them grain-free and sugar-free. And they turned out so much like the originals! So this recipe is in honor of her. She was an amazing cook and baker. She ALWAYS had something great smelling in her house or tasty treats in her freezer. One thing she said and passed onto me was “If you can read, you can cook”. And I have to admit, though there are some skills you need to learn as a cook, it does become just as easy as reading. I am so glad I had her as one of my teachers! And if you are in the learning stage of cooking and baking and are a little overwhelmed everything. It gets easier, and pretty soon cooking or baking will become just as easy as reading too.
These Spritz cookies also worked excellent in the spritz cookie press. The dough is pretty sticky and thick so you need a cookie press that has a lot of power. The one I have is battery powered and recommend that. If you don’t have a cookie press, you can form them with a 1 Tablespoon cookie press or roll them into a 1 inch ball and then press it down with a fork. The cookies taste the same but just aren’t quite as pretty to look at.
This recipe also has cream cheese in it to make it easier to handle and bake. To be honest, I didn’t experiment at all with a dairy-free alternative to cream cheese so I can’t give any good recommendation or substitution for that.
Ingredients
1 stick (1/2 cup butter) organic grass-fed butter, soft
1.5 ounces organic cream cheese
1/2 teaspoon vanilla
1 cup almond flour
3 Tablespoons coconut flour
1 1/2 teaspoons Stevita stevia
Directions
- Preheat an oven to 375 degrees and take out a baking sheet
- In a food processor combine the butter, cream cheese and vanilla
- In a small bowl add the almond flour, coconut flour and stevia and lightly stir together
- Add half to the food processor and pulse together and add the second half of the flour and turn on the food processor for 30 seconds to completely combine the dough
- Using a spritz cookie maker, add the dough into the cookie press and follow the instructions for your press. If you don’t have a press use a 1 Tablespoon cookie scoop and flatten with a fork
- Bake for 9-11 minutes (until very lightly brown) and let cool for 2 minutes on the cookie sheet before putting them on a cooling rack
- Store in an airtight container at room temperature
