Everyday Coleslaw

Oh man, summer has it’s grips in me. I am loving this summer and have made the most of it as I’m working from home this year. Lots of time in the sun taking walks, doing work, reading and enjoying our new home. Our new home isn’t that new to us anymore because this week will make it one year we have been here. Last summer wasn’t fun because we moved twice in 3 months due to a rental home that had water in the basement over and over again. It was a unhealthy disaster. But this summer has been different and for that I’m extremely thankful.

Do you know what else I love about summer and that I’ve been eating a lot of? Coleslaw. I eat it year round but it’s the best in the summer. Before summer is over for the year (tear) I want to give you my easy and everyday coleslaw recipe. It’s perfect matched with almost any meal.

Ingredients

1 small head green cabbage, diced

1/2 small head purple cabbage, diced

2 carrots, grated

1/2-3/4 medium onion, grated

1 1/4 cup mayonnaise

1 Tablespoons yellow mustard (optional)

2 Tablespoons Apple Cider Vinegar

salt and pepper, to taste

Directions

  • In a large bowl combine the green cabbage, purple cabbage, carrots and onion.
  • In a small bowl combine the mayonnaise, mustard (optional), apple cider vinegar, and salt and pepper. Mix together
  • Add the coleslaw dressing to the cabbage mixture and stir until the dressing coats the cabbage
  • Serve cold

The best summer side dish that can go with any meal.
Ingredients

  • 1 Tablespoons yellow mustard (optional)
  • 2 Tablespoons Apple Cider Vinegar
  • salt and pepper, to taste
Instructions
  1. In a large bowl combine the green cabbage, purple cabbage, carrots and onion.
  2. In a small bowl combine the mayonnaise, mustard (optional), apple cider vinegar, and salt and pepper. Mix together
