Guest Post: Homemade Hamburger Helper

I am beyond excited to share this recipe from my dear, dear friend Elise. Elise and I have known each other for about 6 years. Her husband Dr. Dave is a chiropractor and they run an amazing practice in Greensboro, North Carolina. Dave and I were in school together and Elise and I ended up working at the same chiropractic office for close to a year together. She’s amazing and I wish they were closer so we could see each other more. Oh, I’d totally take them as my neighbors too. Amazing as an educator and has some great recipes on her website Healing Cuisine. If you haven’t been to her site, go and check it out! You will learn a LOT from Elise! 

Now, this is a new recipe that I made sort of by accident one night. We hadn’t done the grocery shopping. In fact, we had been many days over due for a full on grocery store trop. I was left with one can of coconut milk and tomato paste in the pantry and a pound of ground beef thawing from the freezer… let me just say it’s times like these that some of my best kitchen magic happens. I call this Homemade Hamburger Helper. And it takes less time to prepare than the boxed version!

Ingredients

1 lb grass fed ground beef

1 small onion, minced

1 cup filtered water

4 red potatoes or 2 sweet potatoes, quartered and clicked [CORE PLAN]

(Replace potatoes with 2 cups cauliflower, broccoli or zucchini) [ADVANCED PLAN]

1 can organic full-fat coconut  milk

1 small can organic tomato paste

2 tsp garlic powder

1/2 tsp ground thyme

1/2 tsp onion powder

1 tsp arrowroot powder

sea salt, to taste

fresh black pepper, to taste
