Cheeseburger Pizza (Grain-Free)

Tonight was pizza night. Why? Because sometimes you just really need pizza! Pizza is one of my favorite foods and I think it always will be.

Earlier today my hubby and I were grocery shopping for all of the groceries for the week and the idea of cheeseburger pizza came to my mind when we were passing by all of the pickles. We had a pound of grass-fed hamburger thawed out and ready to be used so why not put it on top of a pizza with some onions, cheese and pickles? Yep, pickles on top of the pizza. They were my initial inspiration so you can’t forget the pickles. I think the pickles are what really makes this pizza recipe taste like a cheeseburger.

For Christmas we got a pizza stone. It wasn’t something I asked for but my mom knew we’d use it often and included it in our gifts. This was the night we first used it. And it worked beautifully, so we will be using it more and more. If you don’t have a pizza stone or a round pizza pan, a cookie sheet will work perfectly. Just make sure to put some butter or coconut oil down on the pan so the crust won’t stick to the bottom of the pan.

Crust

Grain-Free Two-Seed Pizza Crust (recipe here)

Pizza

1 pound grass-fed ground beef

1 small onion, finely diced

1/2 can pizza sauce, no sugar added (this is important, I use Eden Organic brand)

1/2 cup sliced dill pickles

Grass-fed raw cheddar cheese, shredded (I used about 2.5 cups, but use how much you want to)

Directions

  • Preheat oven to 350 degrees F and take out a pizza stone or baking sheet
  • Make 1 recipe for two-seed pizza crust (recipe here)
  • While the pizza crust is baking, brown the beef with the diced onion in a medium sized skillet. Once cooked through take of of the heat
  • Spread the pizza sauce on the crust and top with 2/3 of the ground beef. Lay the pickles evenly on top of the beef followed by the cheese
  • Sprinkle the remaining 1/3 of the ground beef and onion mixture on the top of the cheese
  • Bake for 15-20 minutes or until the cheese has melted
