Recipes that are easy and quick in my opinion needs to be printed out and put someplace for easy access when you have a busy night and not a lot of time. This recipe fits that bill. All you need are a few ingredients and about 45 minutes and you have dinner! Whether you are single, married or have a busy family, healthy (and easy) meals are needed for everyone!
Ingredients
1/2 teaspoon dried basil
1/2 teaspoon dried parsley
1 teaspoon garlic powder
1/2 teaspoon dried rosemary
1/2 teaspoon dried dill
1/2 teaspoon pepper
1/2 teaspoon salt
4 organic, free-range chicken breasts
3 Tablespoons balsamic vinegar
3 Tablespoons grape seed oil
1 red onion, thick slices
10 grape tomatoes, whole
4 ounces of feta cheese, sprinkled on the top of the chicken once it’s out of the oven
Directions
- Preheat the oven to 400 degrees F
- In a small bowl, combine all of the spices
- Place the chicken breasts in a 9×13 or a deep baking dish
- Pour the balsamic vinegar and grape seed oil over the chicken breasts evenly and then sprinkle the seasoning over the chicken breasts
- Add the red onions and tomatoes around the outside of the pan around the chicken breasts
- Bake for 35-40 minutes until the chicken is done. The tomatoes will be popped and the onions will start to brown on the ends
- Serve with your favorite side dish and Enjoy!

FYI grape-seed oil is another name for canola oil which is terrible for you! You should revise your recipes to include a different oil.

Hi Jen-
I think you mean Rapeseed oil, which is another name for canola oil. Grapeseed oil is made from the seeds of grapes and can be used in baking and cooking safely.
