Day 8 of the 12 Days of Christmas is upon us today. That means only 4 more days of cookies AND 4 more days until Christmas!!!! I LOVE Christmas and I can’t wait to celebrate! It’s been a tradition for my husband and I since we got married to do our own family Christmas with the two of us a few days before Christmas with each of our families. And that day is today!! The plans are to cross country ski, go to a movie, make a fancy Primal (and healthy) Italian dinner and open presents surrounded by Christmas music and holiday scented candles! Oh, and we are going to make another cookie recipe too :). I have been waiting to make one of them because I needed my husband’s help and this is the perfect day to do it! Today is a Chai Tea Cookie. It contains all of the goodness of a big cup of Chia Tea and all of the spices that make you feel like snuggling up with a big cup of tea and reading a good book. This cookie goes with that scenario very well! (And with a little snow on the ground if it’s snowing where you live).
Ingredients
2 sticks (1 cup) organic and grass-fed butter
5 free-range eggs
2 teaspoon Stevita stevia
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 cup canned coconut milk
1 cup almond flour
1 cup coconut flour
1/2 teaspoon pink salt
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Directions
- Preheat the oven to 350 degrees and butter a baking sheet
- You will use a food processor for this recipe. In the food processor add the butter, eggs, stevia, vanilla extract, almond extract, and coconut milk and turn the food processor on for 30 seconds and mix to combine
- In a small bowl add the almond flour, coconut flour, pink salt, baking powder, cinnamon, cardamom, ginger and allspice. Using a fork or spoon give the mixture a stir to combine the dry ingredients
- Add 1/2 of the dry ingredients to the wet and pulse the food processor until it is combined. Add the second half of the dry ingredients and turn the food processor on for 30 seconds to mix all of the ingredients thoroughly
- Using a 1 Tablespoon cookies scoop place the dough 1 inch from each other on the baking sheet. They aren’t going to expand in the oven so they don’t need to be spaced apart very much
- Bake for 13-15 minutes. Once you take them out of the oven you can put them on a cooling rack
- Makes 4 dozen cookies. Store in an airtight container in the refrigerator. The coconut milk needs to be refrigerated or the cookies will go bad quickly at room temperature
