I must be in the mood for chocolate lately. Once again, another chocolate post.
This chocolate pudding is delicious and is made in a similar fashion as a custard. There are a few more steps to this pudding, so it’s not a one bowl dessert, but it’s worth every step. This chocolate pudding will not disappoint!
Ingredients
1 can coconut milk, with 1/2 cup set aside for the thickening
2 Tablespoons water
2 Tablespoons Arrowroot Powder
1/4 cup birch xylitol, powdered
1 teaspoon Stevita Stevia
1.5 ounces 85% dark chocolate
4 egg yolks
2 Tablespoons cocoa
1 teaspoon vanilla extract
Directions
- Take the 1/2 cup of coconut milk that you have set aside and 2 Tablespoons of water and mix it well with the arrowroot powder. This is the thickening agent for the pudding. If you don’t mix the arrowroot powder before, you are more likely to have clumps
- In a medium saucepan, add the remaining can of coconut milk and turn the heat to medium
- Add in stevia, xylitol and dark chocolate and heat to a simmer, while stirring
- In a separate bowl beat the eggs and cocoa very well with a hand mixer. Make sure your bowl is large enough to add all of the coconut milk liquid
- Once the coconut milk mixture is simmering, take it off of the heat
- You are going to add this to the egg mixture, but you first must temper the eggs (heat them slowly) or they will become scrambled eggs. Turn your hand mixer to low and add about 1/2 of the coconut milk mixture. Once combined, add the rest of the coconut milk mixture very slowly
- Once the coconut milk and eggs are mixed together pour back into the saucepan and put back on the heat. Add the arrowroot powder mixture and whisk until it starts to thicken. Make sure you don’t start to boil this mixture because the arrowroot powder will lose some of its thickening capabilities.
- Take off the heat and continue to whisk for another 30 seconds. Add the vanilla and stir to combine
- Pour the chocolate pudding into 4 small bowls
- Refrigerate at least 3 hours to set, can be made a day ahead of time also, just make sure to put saran wrap on top of each bowl.
- Serve with whipped cream or whipped coconut cream
