Spinach, Tomato and Egg Breakfast Pie
 
 
Sweet Potato crust egg bake or as I call it breakfast pie. There is an option with dairy (goat or parmesan cheese) or without dairy by omitting the cheese. Also can be made the night before and warmed up to serve.

Ingredients
  • 2 cups sweet potato, shredded
  • 2 Tablespoons organic butter
  • ¼ onion, diced
  • 2½ cups fresh spinach
  • 1 cup grape tomatoes
  • 6 eggs
  • ½ cup coconut milk
  • 1 cup shredded parmesan cheese or goat cheese
Instructions
  1. Preheat the oven to 350 degrees
  2. In a pie plate evenly distribute the sweet potatoes on the bottom of the plate
  3. Heat a medium skillet on medium heat and add the butter. When the butter is melted add the onions, tomatoes and spinach to the skillet and sauté until the spinach is wilted and the tomatoes are starting to split. Add the vegetables on top of the sweet potatoes in the pie plate
  4. In a medium bowl whip the eggs and the coconut milk with a hand mixer. Add the cheese to the egg mix
  5. Pour the eggs into the pie plate
  6. Bake for 40 minutes and let sit for about 20-30 minutes before serving
  7. You can make this a day ahead of time
