Sweet Potato crust egg bake or as I call it breakfast pie. There is an option with dairy (goat or parmesan cheese) or without dairy by omitting the cheese. Also can be made the night before and warmed up to serve.

Ingredients
2 cups sweet potato, shredded
2 Tablespoons organic butter
¼ onion, diced
2½ cups fresh spinach
1 cup grape tomatoes
6 eggs
½ cup coconut milk
1 cup shredded parmesan cheese or goat cheese
Instructions
Preheat the oven to 350 degrees
In a pie plate evenly distribute the sweet potatoes on the bottom of the plate
