Almond Dream Frosting
- ½ cup organic palm shortening
- ½ stick (1/4 cup organic butter), softened (or ghee)
- ½ teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 Tablespoons arrowroot powder
- 2 teaspoons Stevita stevia
- ¼ cup raw honey
- 2 cups unsweetened coconut, toasted in the oven and cooled
- In a medium bowl beat all of the ingredients, except the coconut) with a hand mixer until beaten. Gently stir in the toasted coconut
- Frost the cookies
- Store any remaining frosting in the fridge
