Day 3: Coconut Cloud Cookies (Nut-Free and Dairy-free option)

Ingredients
  • ½ cup organic palm shortening
  • ⅓ cup birch xylitol
  • 1 teaspoon Stevita Stevia
  • 5 free-range eggs
  • ¼ cup raw honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup organic coconut cream (or sour cream)
  • 1 teaspoon salt
  • 1 cup coconut flour
Instructions
  1. Preheat the oven to 350 degrees and butter a cookie sheet
  2. In a bowl cream the shortening, xylitol and stevia for 30 seconds until the butter is fluffy
  3. Next beat the eggs, vanilla extract, almond extract and sour cream and salt
  4. Gradually add the coconut flour and mix well
  5. Using a cookie scoop drop the cookies about 2 inches apart on the baking sheet and bake for 15-17 minutes
  6. Remove from the cookie sheet and set on a wire rack to cool
  7. Frost cookies with the Almond Dream Frosting once the cookies are cool
  8. Makes about 40 cookies
