Banana Coconut Flour Birthday Cake with Buttercream Frosting (Baby Friendly)
 
 
The perfect birthday cake for an baby's first birthday.

Ingredients
  • 2 Organic Bananas, fresh (not frozen)
  • 3 eggs
  • ¼ cup coconut oil, melted
  • 3 Tablespoons Unsulphured Molasses (this brand)
  • 1 Tablespoon Vanilla Extract
  • ½ cup Coconut Flour
  • 1 teaspoon stevia (This is my favorite brand)
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 1 Tablespoon cinnamon
Instructions
  1. Preheat oven to 300 degrees F
  2. Grease 2-4 inch cake pans (I used these) with butter or coconut oil (you can use 1-8 inch cake pan, reduce the cooking time)
  3. In a medium bowl, combine the wet ingredients and mix with a hand or stand mixer
  4. In a small bowl, combine dry ingredients and mix together quickly with a fork
  5. In two batches, combine the dry ingredients with the wet ingredients and mix once in between
  6. Once the cake is mixed together, fill each cake pan with half of the batter
  7. Bake for 60 minutes and a toothpick should come out clean
  8. Let cook and use the buttercream frosting recipe below
