Everyday Coleslaw

- 1 small head green cabbage, diced
- ½ small head purple cabbage, diced
- 2 carrots, grated
- ½-3/4 medium onion, grated
- 1¼ cup mayonnaise (healthy mayo with good fats and oils)
- 1 Tablespoons yellow mustard (optional)
- 2 Tablespoons Apple Cider Vinegar
- salt and pepper, to taste
- In a large bowl combine the green cabbage, purple cabbage, carrots and onion.
- In a small bowl combine the mayonnaise, mustard (optional), apple cider vinegar, and salt and pepper. Mix together
- Add the coleslaw dressing to the cabbage mixture and stir until the dressing coats the cabbage
- Serve cold
