Everyday Coleslaw
 
 
The best summer side dish that can go with any meal.

Ingredients
  • 1 small head green cabbage, diced
  • ½ small head purple cabbage, diced
  • 2 carrots, grated
  • ½-3/4 medium onion, grated
  • 1¼ cup mayonnaise (healthy mayo with good fats and oils)
  • 1 Tablespoons yellow mustard (optional)
  • 2 Tablespoons Apple Cider Vinegar
  • salt and pepper, to taste
Instructions
  1. In a large bowl combine the green cabbage, purple cabbage, carrots and onion.
  2. In a small bowl combine the mayonnaise, mustard (optional), apple cider vinegar, and salt and pepper. Mix together
  3. Add the coleslaw dressing to the cabbage mixture and stir until the dressing coats the cabbage
  4. Serve cold
