You all know I love a good smoothie. I have them often, but I don’t do them daily. Honestly I can get a little sick of them. I tend to make them the same way and they lack variety. Another reason I stick to similar ingredients is because I don’t want to put anything too high glycemic (aka blood sugar spiking) in my smoothies.
If it were up to me I think I’d eat a tropical fruit smoothie everyday. But that lacks good fat, a lot of nutrients and becomes high in sugar quickly. That’s not how I want to start my day. I look at that as more of a treat or dessert vs a daily breakfast.
This smoothie is unique and gets me out of my smoothie rut. But it’s full of healthy fats (hello avocado) and doesn’t have the high blood sugar spiking fruits in it. It has a green granny smith apple, which is the apple with the least amount of sugar in it.
The uniqueness comes from the mint. It’s so good with fresh mint! I don’t buy fresh mint a whole lot but if you do, make sure to make something else during the week with mint. You don’t want to waste it. Another way you can use the mint you buy is by freezing it in small ice cube trays pureed with just a little bit of olive oil. You have a piece of mint when you need it, or really, when you need to make this delicious smoothie.
Ingredients
1 Granny smith apple, cored and cut into pieces
1/2 ripe hass avocado
1/2 cup water
3 sprigs of mint leaves
1 tsp freshly squeezed lime juice
Stevita Spoonable Stevia, to taste
Ice
Directions
- Combine all ingredients in a blender and pulse until ice is incorporated (If you have a Vitamix or other high powered blender you can choose smoothie mode or a higher power mode that will break through the ice and not require the need to pulse
- Puree until smooth
- 1 Granny smith apple, cored and cut into pieces

- ½ cup water
- 3 sprigs of mint leaves
- 1 tsp freshly squeezed lime juice
- Stevita Spoonable Stevia, to taste
- Ice

Do you peel the apple first?

You don’t have to, I don’t because there are good nutrients in the peel. But you can if you wish! Works both ways.
