Honey mustard dressing means summer to me. Why? I have no idea. Maybe I used to eat it in the summer? Maybe it’s the bright yellow color that reminds me of sunshine? Maybe it’s just because everyone eats more salads in the summer time? This honey mustard dressing is ushering me into spring and summer time. Who’s with me?
I used to be overwhelmed with the thought of creating my own salad dressings. Why would I make my own when I could just buy it? I’m all for purchasing something pre-made if you don’t sacrifice the quality of the food. That’s where it gets a little hairy with salad dressings. Most salad dressings contain bad fats (read about good fats here) and loads of sugar. It’s almost impossible to find a healthy salad dressing on the market and to my knowledge I don’t know of a healthy brand of honey mustard. If you want a good honey mustard you have to make it yourself. Good thing all you need is a blender to make your own honey mustard dressing.
Ingredients
1/4 c yellow mustard (dijon mustard optional)
1/4 cup raw honey
3 tablespoons apple cider vinegar
1/2 teaspoon garlic powder
dash salt
dash pepper
2/3 cup olive oil
Directions
- In a blender add the mustard, raw honey, apple cider vinegar, garlic powder and salt and pepper
- Turn the blender on low and slowly pour in the olive oil
- Turn the blender to high and blend for 20 seconds to emulsify the oil into the dressing
- Store in the fridge for up to 2 weeks

- Store in the fridge for up to 2 weeks
