I am beginning to type this post as I sit in my living room on New Year’s Eve. The last day of 2014 always brings a lot of reflection for me. It’s reflection in a good way. I believe we blow past so many of our feelings and what’s deep in our heart and what matters to us and instead focus so much on being busy. And for me if I want to escape you better believe I’m going to be cruising Instagram or another social media outlet. This year has been a good one. It’s also been very tough in so many ways. Joys and trials all wrapped into one year. Many of the trials became joys. For example moving into a rental home that we searched and prayed for only to move 3 months later because of water in the basement. But that rental home brought us to our own home. One that we bought and could put our own stamp of ownership on. This year has also been the best for my health. I was sick for almost 10 straight years and I saw a lot of breakthroughs over the last 9 months with the most stability in my health. Wow, I could write a whole blog post on how feeling better affects your entire life (maybe I will in 2015). These are just to name a few.
At the end of the year I also reflect on the past year with this blog. This hobby became a part time job and I’ve been able to help more of you with healthy recipes and sharing resources I’ve written based on what you want to hear. This year has also shaped this blog into so much more than just recipes. Just Enjoy Food was all recipes when I started. Recipes were all I wanted to share. But throughout the years of being sick I learned a lot more than food. This year I really decided to share more and wrote a lot of articles. I really hope they have been an added blessing to you this year! I also decided to share my love of Essential Oils. And boy do I love my oils! A great many of you joined me there too, which I’m so thankful for too because it’s another way that you can improve your health and have some go-tos in your natural wellness cabinet (if you didn’t figure that out it’s my word for medicine cabinet). 2015 is going to be a great year. I have already started my goals for 2015. This year I am using Lara Casey’s Power Sheets to set and make goals that matter within my priorities in life. Do you set goals for the new years? I’m not talking “New Years Resolutions” type goals, but real goals that matter and that you want to strive to achieve in life over the next year? Things like growing relationships and digging deeper in your faith? Growing a business or a ministry? Faith goals and personal goals along with career goals?
My husband and I attended our church’s annual Faithwalkers conference. And although I learned a TON of things, there was one thing in particular that stood out this year to me that I want to share with you. It’s my words of 2015. Grow and Team. There’s so many things that are jam packed into those words. So many areas I want to grow in 2015 and things I want to grow into in 2015. And I want to do it with my ultimate teammate in this life: my husband!

Big family favorite!! I actually took these along while on a weekend road trip with the fam. Cooked them right in the hotel room – avoided the processed junk that’s called “Continental Breakfast”. How? I got all the liquid ingredients ready & put them into a bowl with a tight-fitting lid (made sure I could mix in it & would fit in a small fridge). I put the dry ingredients in a baggie. Packed my immersion blender and waffle iron. Turned out great!! Haven’t made them for a while but I’m thinking it’s time this weekend.

Waffles on a road trip. Wow… LOVE!! I’ve brought crockpots and coolers but not waffle makers. So glad you love it!

I recently found your blog and I LOVE it!!!!!!
I wondering if you could experiment and try to come up with some sort of Chinese dish. I really like to make new dishes (for my family), but I haven’t found any gluten free Chinese dishes.

Hi Mary! Thanks for the blog love, I’m so glad you found my blog and are learning a lot. Have you tried to search for Chinese dishes on pinterest? You could search “Paleo Chinese” and that may get you some. I know I’ve seen them before! I don’t know much about Chinese food/ spices so I may not be the best one to create a dish. But I’m sure some other bloggers have done it! But I will think on it and see if I can think of a recipe!
