Day 3 of the 12 Days of Christmas cookies is coming to you with a Coconut Cloud Cookie. These wonderful cookies are light and airy and the almond dream frosting tops off of the cookies perfectly!

This recipe wasn’t an easy one to create. I had to go through a few versions of the frosting to get it just right. I had my main taste tester (my husband) try it and he usually loves my recipes. And he said that it needed some work and it wasn’t that great. Oops… so another round of the frosting and a few ingredient tweaks later and he said this was one of his favorite cookie recipes out of all of them. Whew, glad I could pull that frosting off!

Ingredients
1/2 cup organic palm shortening
1/3 cup birch xylitol
1 teaspoon Stevita Stevia
5 free-range eggs
1/4 cup raw honey
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup organic coconut cream (or sour cream)
1 teaspoon salt
1 cup coconut flour
Directions
- Preheat the oven to 350 degrees and butter a cookie sheet
- In a bowl cream the shortening, xylitol and stevia for 30 seconds until the butter is fluffy
- Next beat the eggs, vanilla extract, almond extract and sour cream and salt
- Gradually add the coconut flour and mix well
- Using a cookie scoop drop the cookies about 2 inches apart on the baking sheet and bake for 15-17 minutes
- Remove from the cookie sheet and set on a wire rack to cool
- Frost cookies with the Almond Dream Frosting once the cookies are cool
Makes about 40 cookies
Almond Dream Frosting
1/2 cup organic palm shortening
1/2 stick (1/4 cup organic butter), softened (or ghee)
1/2 teaspoon vanilla extract
1 teaspoon almond extract
2 Tablespoons arrowroot powder
2 teaspoons Stevita stevia
1/4 cup raw honey
2 cups unsweetened coconut, toasted in the oven and cooled
Directions
- In a medium bowl beat all of the ingredients, except the coconut) with a hand mixer until beaten. Gently stir in the toasted coconut
- Frost the cookies
- Store any remaining frosting in the fridge
