When you are trying to eat healthy and reduce or eliminate grains one thing that can be hard is breakfast dishes. Things like pancakes and waffles can be quite tricky. And because when you go out to eat they are off limits, let’s not keep that trend when you are at home? One of my goals with this blog is to make everyday food healthier. So in this case, how about a grain-free apple pancake recipe that has sautéd green apples in a butter sauce. The apples make a sauce that’s so good you don’t need any maple syrup on the pancakes.
These pancakes are made with buttermilk. Make sure that you buy organic buttermilk for these pancakes. If you can’t have dairy, just used an organic canned coconut milk in the same quantity as the buttermilk.
I made these pancakes for friends who were coming over for breakfast. It was the first time I had made them (I actually made up the recipe the morning of their visit) and I was very nervous. To be honest I even had a back-up recipe ready to go just in case they were a total flop. And I got up really early to make a test pancake. The couple of test pancakes turned out very well and so did the whole breakfast. I was relieved and also excited to share the recipe on my blog with all of you!
Ingredients
1 cup almond flour
2 Tablespoons coconut flour (to make the batter a bit thick)
1/4 teaspoon healthy salt
1/4 teaspoon Stevita stevia
3/4 teaspoon cinnamon
1/4 teaspoon ginger
3/4 cup buttermilk (or canned coconut milk)
2 eggs
3/4 cup green apple, finely diced
Directions
- Heat up a griddle or a cast iron skillet/ griddle on the stove
- In a medium bowl add all of the dry ingredients, almond flour through the spices. using a fork gently stir until the ingredients are combined
- In a large bowl pour the buttermilk and the eggs and lightly beat with a fork
- Add the dry ingredients to the buttermilk slowly and using a whisk, mix together
- Once the batter is made, add the diced apples and stir in with a spatula so you don’t damage any of the apple pieces
- Make pancakes as usual. If you desire more of a cinnamon flavor, you can add it to each pancake after you have placed it on the griddle. I turned down the temperature on my griddle a little more than usual so they would cook slower and the apples would cook more
- While you are cooking the pancakes make the sautéed green apples
Sautéed Green Apples
2 Tablespoons organic butter
1 green apple, thinly sliced
1/2 teaspoon Stevita stevia
1 Tablespoon raw honey
- On medium heat, preheat a medium-sized saucepan and put the butter in the pan. Once the butter is melted add the apples and stir until they are tossed with butter
- Add the stevia and honey and sauté the apples for 5 minutes
- Reduce the heat to medium-low and let sit for another 5 minutes, stirring occasionally
- Remove the apples from the heat and let sit to about room temperature before serving with the apples

Do you think I could mix up the dry ingredients and keep it on hand for a pancake mix? How about substituting dry Buttermilk so I can keep it in the mix? I am trying to find a healthy pancake mix to have on hand for my boys. They just love pancakes.
