A sweet strawberry sauce that’s extremely versatile. Psst… there’s no sugar too!
As you know by now, I love making everyday foods healthier. And I also love sauces. I think that meats and desserts and sides are always better when you can add a sauce. But the problem that I encounter and I am sure you do is that many sauces are laced with load of artificial colors and preservatives and high fructose corn syrups and even wheat. Today I want to show you how to make a strawberry sauce. We use this a lot in our house. We use it on pancakes, waffles and ice cream. I remember as a child buying strawberry sauce in the freezer that was already made up. But it had a lot of sugar in it and it tastes the same when you use stevia. Another thing I love about this recipe is that it is cost effective. Here in Minnesota we are definitely ending berry season and bringing on the winter and fresh organic berries are so expensive. I use them for special occasions when I really need fresh berries. Otherwise I use frozen organic strawberries. Every summer during strawberry season I go out and pick a few buckets of strawberries and freeze whole berries for the year. It saves you quite a bit of money and you always have strawberries on hand and ready to take out of the freezer for when you need them. That’s what I use for this recipe.
Ingredients
4 cups frozen whole strawberries, thawed
1 teaspoon stevia
1 teaspoon fresh lemon juice (optional)
Directions
- In a mediums sized bowl add the strawberries until they are thawed
- Start mashing the strawberries with a fork or a potato masher until almost pureed
- Add the stevia and lemon juice and mix together
- Store in an airtight container, refrigerated for up to 4 days and use as desired

I can remember my mother doing this when I was a youngster. Only she would use sugar and it was fresh strawberries.

Awesome Roger! Now you also have a healthy alternative to a childhood favorite. You can use fresh strawberries too, but it won’t produce quite as much liquid as the frozen.
