So delicious with a little coconut milk or to top some greek yogurt
I absolutely love granola. Pre-healthy eating days I could and would eat granola in way too large of quantities. Not that we have revolutionized our diet, granola is a wonderful little treat. I try not to have too much, no more than a 1/4-1/2 a cup at a time. And I recommend the same to everyone else. If you have any more you may be eating too many grains and causing your body to feel sluggish, tired and overall craving more and more grains or sugars. And we all know that’s not a fun and welcomed feeling. It is also better eaten with a protein. So add it to greek or organic yogurt (if you are not dairy sensitive) or eat it with a couple of eggs cooked your favorite way. This granola has some amazing fat in it from shredded coconut and coconut oil and also from almonds. Trust me with this granola, a little goes a long way!
Granola, before baking
Ingredients
2 cups organic old-fashioned oats
1 1/2 cups organic organic buckwheat groats
1/2 cup quinoa, rinsed but not cooked
2 cups unsweetened shredded coconut
2 cups raw almonds, coarsely chopped
3/4 cup coconut oil, melted
1/4 cup honey
1 tesapoon Stevita Stevia
1 Tablespoon cinnamon
1 teaspoon vanilla extract
1 teaspoon almond extract
Directions
- Preheat oven to 350 degrees
- Combine oats, buckwheat groats, quinoa, coconut and almonds in a large bowl
- In a small saucepan or metal measuring cup, melt the coconut oil so it becomes a liquid
- In a medium bowl mix the coconut oil, honey, stevia, cinnamon, vanilla and almond extract. If you don’t like the flavor of almond extract you can omit it or use less
- Pour the wet ingredients into the dry and mix with a spatula until evenly combined. Pour onto 1 large jelly roll pan or two cookie sheets. Bake for 45 minutes, stirring every 10-15 minutes. You don’t want one area to get burnt or overdone.
- Cool and put into mason jars or glass containers for storage.
- Enjoy!
