A basic non-dairy and non-sugar ice cream. It’s so good it’s perfect for anytime!!
I love this recipe. One of my favorite things to eat as a treat is ice cream, and I would actually say that it in my top 5 favorite foods. Well, it was until I really started to revamp my diet and to eliminate sugar and gluten and reduce grains and diary, ice cream was out. And the cravings for it were out too. But sometimes you just want to mix up your diet and have a treat. And that is where this recipe comes in. It is a wonderful treat, but it isn’t full of any junk… just full of good fats, a little protein, and topped with fresh berries. And a little suggestion with the guar gum, I get it in bulk so I only buy it a couple of Tablespoons at a time. It is considerably more cost effective this way. Enjoy ice cream guilt free and without the negative gross feeling you can get from eating conventional ice cream.
Ingredients
1 can coconut milk, organic and full fat
2 eggs, organic and free-range **
1 Tablespoon Vanilla
2 Tablespoons Xylitol or 1 1/2 teaspoon Stevita Stevia
1 Tablespoon gelatin dissolved in 1/4 cup warm water or pinch of Guar Gum ( optional, it thickens it more and is less like soft serve).
Directions
- Put all of the ingredients in a blender and mix on high for 1 minute so everything is combined thoroughly (Add the gelatin last and puree until smooth)
- Put the mixture into your ice cream maker and make according to the manufacturer’s directions.
- The ice cream will be softer than normal, more like a soft serve because of the coconut milk. Top with fresh berries and serve.
**You may be wondering about the raw eggs. As long as your eggs are healthy and free range there is no need for you to be nervous of getting Salmonella. If you want to be even more cautious, wash your eggs before you crack them. That makes sure no bacteria is on the outside of the shell.
