A healthy way to enjoy the taste of pizza without compromising health
I love pizza! It is honestly on one of my favorite foods. It is pretty much cut out of our diets because it is laden with gluten, dairy, and often times unhealthy meats. This recipe came about in one of my cravings for pizza and thinking what I could do that would taste like pizza, but be healing to our bodies. One recipe I thought up was a pizza crockpot dish that definitely needs some tweaking before it could ever make its way onto a blog. Let’s just say it tasted better in my head. Then I thought… what about pizza + eggs. Then the frittata became a reality, and this tasted great too!
Ingredients
1 Tablespoon coconut oil
1/2 medium onion, finely chopped
1 green pepper, finely chopped
1/4 lb all beef pepperoni or salami (nitrite free), coarsely chopped
12 eggs
1 cup of raw cheese, shredded
1 tsp italian seasoning
Dash of salt and pepper
1 can pizza sauce
Directions
- Preheat oven to 350 degrees F
Preheat a ovenproof medium skillet on medium heat. Add the coconut oil and when melted, add the onion and green pepper. Cook for 3-5 minutes until the onions are soft. Add the pepperoni and sautee for 30 seconds. - In a large bowl, add the eggs and lightly beat. Add the eggs to the vegetables in the skillet and stir. Add the cheese, italian seasoning and the salt and pepper and lightly stir again.
- Let the eggs mixture sit on the stovetop for 5 minutes beginning to cook.
- Place the skillet in the oven and cook for 25 minutes, or until the eggs are cooked through.
- Carefully take the skillet out of the oven and let the eggs sit for 5 minutes to set. Serve in slices topped with warmed pizza sauce ladled on top.
