The perfect dish to bring to your summer gatherings
I find that a challenging part of eating healthy is all of the parties, events and gatherings. The things that I find very yummy, sweet, and savory are sometimes not the same as someone with a different diet. It is shown that the more sugar, processed foods and chemicals in a food makes us addicted and actually changes our taste buds. For example, eating foods laden with high fructose corn syrup, artificial colors and artificial chemicals make you crave more and more of the same types of foods. Then when you eat something like a piece of dried fruit, a sugar free dessert or anything else not processed your body doesn’t recognize that as sweet and satisfying. That why shifting our diet from the SAD diet (Standard American Diet) to a diet consisting of whole foods can be a challenge. There are chemical addictions to break and taste buds to retrain. But keep working on it and keep making those healthy choices. There will come a day that a fresh fruit bowl (maybe with a dollop of whipped cream or coconut cream) will sound more appetizing than a dessert plate. And trust me, your whole digestive tract will think so too. This Fruit Pizza was made just for the occasion of serving it to people with all different pallets. It is gluten free, but not grain free. It is also not dairy free, although I don’t think it would be too hard to modify that either. And it was a hit at the gathering. Please use this for your summer activities.
Ingredients
1 cup butter, softened
1/2 cup Stevia in the Raw
2 cups gluten free flour
8 oz cream cheese, softened at room temperature
1/2 cup Stevia in the Raw
1/2 teaspoon vanilla
2 Tbs Arrowroot powder
1 cup orange juice or other tropical/ citrus juice
3 Tablespoons Coconut Sugar
1/2 teaspoon Stevita Stevia
1 teaspoon lemon juice
2 Kiwi’s, sliced and then quartered
2 Bananas, cut in slivers
1/2 pint blueberries
1/2 pint raspberries
1 pint strawberries, sliced
Handful of grapes, halved
Directions
- Preheat oven to 350 degrees F
- In a large bowl, cream butter and the first 1/2 of Stevia in the Raw. Slowly add the gluten free flour to the butter mixture and mix until it creates a dough.
- Press dough into a buttered cookie sheet. Bake 12-15 minutes and cool.
- In a medium sized bowl, beat together the cream cheese, second 1/2 cup Stevia in the Raw and vanilla. Spread the cream cheese mixture in a thin layer over the cooled pizza crust.
- Top with the cut fruit until the pan is covered and you can’t see much of the cream cheese topping.
- In a small saucepan, combine the orange juice,sugar and lemon juice. Turn the stove on medium and begin to stir with a whisk. Add the arrowroot powder slowly and continue to whisk vigorously. Continue to heat until it thickens. Take it off of the heat and cool.
- Drizzle the glazed topping on top of the fruit. It prevents the fruit from turning brown.
- Refrigerate before serving.
2. Press dough into a pizza stone or pan. Bake 8-12 minutes.
3. Beat together the cream cheese, remaining 1/2 cup sugar and vanilla. Spread onto the cooled crust. Top with fruit—you can use more or less of course!
