A no-bake dessert that is full of fat and doesn’t lack in taste. They are great to freeze for a single serving snack.
1 cup mixed nuts (without peanuts)
1/2 cup sesame seeds
3/4 cup unsweetened shredded coconut
1/4 cup almond butter (or valencia peanut butter)
1/4 cup coconut oil
1 teaspoon pure vanilla extract
1/8 to 1/4 teaspoon sea salt
1 teaspoon of Stevita stevia extract
Easy Chocolate Topping
2 squares of unsweetened baking chocolate
2 tablespoons organic butter
1 1/2 teaspoon pure stevia extract
For Snack Bars:
Put nuts and sesame seeds in a food processor and pulse until the nuts are chopped. Toast coconut and nuts in a dry pan over medium-low heat until slightly browned. Melt coconut oil and nut butter in a pan on medium. Stir until smooth. Add vanilla extract, stevia, and sea salt stirring until incorporating. Fold into nut mixture. Press into an 8 by 8 pan with a spatula. Quick set in the freezer for 20 minutes. Spread on the chocolate topping and freeze until set.
For Chocolate Topping:
Cut unsweetened chocolate into 4 parts. Melt unsweetened baking chocolate in a small pot on medium. Stir until chocolate is completely melted and smooth. Stir in butter and stevia until mixture is completely blended. Spread over cooled bars immediately.
Cut into 6 bars. Store in the refrigerator or freezer covered.
