Grain-free irresistible cookies. Filled with healthy fats!
3 Egg Yolks
2 Tbs Xylitol (or an additional 1 teaspoon of stevia)
4 Tbs Butter (1/2 stick), soft
1 1/4 tsp almond extract
3 Tablespoons Raw Honey (optional)
2 teaspoon Stevita stevia
1 1/2 tsp baking powder
1/4 tsp salt
2 3/4 cups finely shredded coconut, unsweetened
1/3 cup almond flour
Preheat oven to 335 degrees F
Beat the egg yolks, xylitol (optional), and butter until thick and creamy, about three minutes. Add the whole egg and beat for another minute. Add the almond extract, Honey (if using), stevia, baking powder and salt. Beat until mixed. Add the coconut and almond flour mixing by hand, or on low with the hand mixer.
Depending on the size of macaroons you want, fill a cookie scoop or ice cream scoop with dough and place on a cookie sheet. Bake for 7-12 minutes until the edges just start to turn brown.
